Is s90v better than s30v?
S30V will be easier to sharpen in general, but S90V will hold an edge for longer while not being that much harder to sharpen.
That also depends on who you get the knife from, heat treament etc.
Given a choice between the 2 steels everything else being the same I would choose S90V..
